Busy, BUSY!!

Wow it's been a busy last couple of weeks/weekends. Hog football started and I couldn't be happier = ) Granted our game against ULM wasn't the greatest but I still love my hogs and you just never know what we could do. I'm hoping we just come out and give it our all against Alabama this weekend.
Mom went to the LMU game with me, whitney and kellye last weekend and this was her first Hog football game EVER or first tailgate EVER = ) She had fun and even said she'd do it again (after that ugly game too)

Little Cooper is growing BIG TIME- which is making my belly grow big time ha! Here's a picture I took after working out at 23-weeks. Please check out my other baby in the background = )
Gosh, I need to take one now (almost 26 weeks) because I feel like it's a good 2-3 inches bigger = ) Cooper is definitely a mover and you can see him kick a lot just looking at my belly. In the past couple weeks I've started to notice him moving either an arm or leg from 1 side to another and it's crazy!! He definitely kicks the most at about 9:30-10:30 right when I'm trying to relax and get some sleep ; ) So he's definitely a night owl and I'll need to get used to that I guess. Our next appointment is next Tuesday but I don't think it's going to amount to much- just measuring my belly and hearing the heartbeat, no ultrasound = ( I seriously wish you got one at each visit no matter what ; )

I'm still doing Crossfit and try to go at least 3x a week but I haven't been doing the greatest in the past 2 weeks. I tried to jump a 30inch box jump and got a battle wound- I don't think the picture does the wound justice ha- but I will get it someday!!!

I made a very yummy dinner for my dad and I tonight (he's in town painting) that I found on Pinterest. It's called "Taco Cupcakes" and it was soooo good and pretty simple/quick.

Final product- i stole the picture from the website because mine did not look this pretty!
Recipe:

  • 1 1/2 tsp. of Olive oil
  • 1/2lb. of ground beef (I used turkey)
  • 1 pkg. of taco seasoning
  • 1 can of black beans (drained/rinsed)
  • 16 wonton wrappers (I could not find these, so I used Fillo dough from the freezer section) If using fillo dough maybe set it out for like 5min. before using it so it'll thaw out, it still might be very crumbling but I still made it work
  • Queso dip or salsa con queso (I used a jar of tostitos cheese dip on chip aisle)
  • Shredded cheese
Instructions:

  • Preheat oven to 375* Mist a mini muffin pan with cooking spray (recipe called for 8 count muffin pan but mine has 12 and it worked)
  • Heat olive oil in large skillet over med-high heat and add in your meat, taco seasoning. When meat has cooked almost all the way add in the black beans and continue to cook until all warm
  • Push you wonton paper/or fillo dough into each spot and spoon a tsp. of queso dip into each wrapper and spread across the bottom
  •  Now spoon the meat/beans mixture into each cup (just a little, like 2 tsp.) and then put salsa on top followed by a pinch of shredded cheese
  • NEXT- do it all again 1 more time- you start back with the fillo dough and stack on top- so each one is double stacked
  • Bake for approximately 15min. or until golden brown. Let them cool for 5min. before scooping out and add some guacamole to the top if you want- AMAZING!!!
(It might be hard to double stack but I just smashed it down quite a bit and it worked)
