Woody House Happenings

We'll start at Easter- Andrew had to work Easter so we didn't do much but I wanted to do something with him. So we went and grabbed brunch really quick at Tusk & Trotter. They have it buffet style and it was very yummy.


Andrew has been wanting a jeep for awhile but then gave up. Well he was at work driving around and saw this beauty at the Volkswagon Dealer in Rogers. He sent me a picture and I'm pretty sure it said "I'm in love"and then had a picture of the jeep ha! I told him he needed a new vehicle so if we could get a deal on it then get it! We traded in his truck and he brought it home and I LOVE IT! I've been trying to steal it from him but I don't think it's going to happen. But at least I can drive it when he's at work = )




There's a yummy little crepe trailor in downtown fayetteville right off Dickson St. (across from Waffle House). I was walking last Saturday and I saw the word crepe so of course had to stop and get one- AMAZING!! I just got plain nutella but loved every bit of it.




I've got a yummy new recipe for you all. It's called "Tomato Cream Chicken Sausage Pasta" but I couldn't find chicken sausage so used turkey breakfast sausage. It's super easy to make and doesn't take too terribly long. I got it from paleo.omg which has lots of yummy Paleo recipes. 

Tomato Cream Chicken Sausage “Pasta”


Prep time: 20 mins
Cook time: 15 mins
Total time: 35 mins
Serves: 2-4

Ingredients
  • 1 medium sized spaghetti squash
  • 2 chicken sausages, diced
  • 1/2 cup canned full fat coconut milk
  • 1/2 cup tomato sauce
  • 1 bundle of spinach, stems removed
  • 1 teaspoon dried tarragon
  • 1 teaspoon dried thyme
  • 1 teaspoon dried leaf oregano
  • salt and pepper, to taste
Instructions
  1. Preheat your oven to 425 degrees.
  2. Cut your spaghetti squash in half lengthwise and use a spoon to scrap out the excess seeds and threads.
  3. Place cut side down on a baking sheet and cook for 20-25 minutes or until spaghetti squash “gives” when you poke at it.
  4. Once your spaghetti squash is done cooking, take out of the oven to cool.
  5. Heat up a large skillet under medium heat, add the coconut milk and tomato sauce and mix together. Let simmer for about 3-4 minutes.
  6. Now add your diced chicken sausages and spices.
  7. Let the chicken sausages simmer for a couple minutes, then add your spinach to the sauce and simmer for another 3-4 minutes or until chicken sausage is cooked through.
  8. Then use a fork to thread your spaghetti squash and add directly to your chicken sausage sauce mixture.
  9. Mix together then plate!
  10. Consume!
I have always wanted to try spaghetti squash but always figured I'd mess it up somehow. It's actually quite simple if you follow the above directions and pretty tasty! It doesn't have much flavor when it's plain but taste good with the sauce and meat.


Brooke (janae's sister), Whit and I hosted Kirby and Janae's couples shower Saturday night. We went with a cookout and Hogs theme. It was a lot of fun and turned out great! We had tons of different dips for appetizers, cheeseburger sliders, hot dogs, baked beans, cole slaw, potato salad and cupcakes!

Last but not least a picture of my sweet girl. She's banned from being inside by herself because she can't seem to stay off the couch! I've given her tons of chances but I came home and she was just sitting on it and would not get off- I was not happy at all! I came home last weekend and she's sleeping in the sun(which she loves) on the back porch.
