A year already?!?!?

Andrew and I celebrated our 1-year anniversary on April 23rd. It doesn't seem like it's been a year already but yet seems longer at the same (it's that's possible to understand). It's been a wonderful year and I can't imagine having a better husband. Looking forward to many more years with him.

We wanted to go on some kind of trip to celebrate the big 1 year. We thought about a cruise but since it was last minute we couldn't really find a cruise going to the countries we were interested visiting or that worked with our schedules. So we decided Savannah, I know random right. We have both heard how pretty it is so decided to go there. I looked up condos on vrbo.com and found a cute old house that people have remodeled and put apartments inside it.
We had a great time and Savannah is really pretty. The houses are old and gorgeous and loved the pretty parks.

Anniversary night about to dig into the cake! It was actually still pretty moist in the middle but too sweet for me, I had just had 1 bite

We made reservations to eat at The Old Pink House and it was delish!! (Thanks for telling me about it Lora)

The last night in Savannah we had to go to the best restaurant ever!!! Ms. Paul Dean's Lady & Sons- and we were miserable after leaving but so worth it!!!

       Yes that's my 1st plate and I went back for 2nds (just for sides) and had dessert!


This past Saturday I ran the 5k for Race for the Cure and raced for my friend Melanie. She's a strong friend that got diagnosed with breast cancer at the age of 24- she was brave and inspiration to all and beat it like it was nothing!
       I thought this board was cool to write the name on the napkin for who you were supporting


Nala girl was very happy when Andrew and I got home!


It's starting to feel more and more like summer and the only thing I like about summer (b/c it's always too hot) is grilling out! I've been wanting to try these yummy beef filet pinwheels from the butcher in Walmart and they were pretty good. Bad thing is I thought maybe that was goat cheese but Andrew said it was bleu cheese. I'm not really a fan of bleu cheese but the taste wasn't so strong after they were grilled.


My vacation is over already and back to work tomorrow. I must admit I miss my kiddos.

Woody House Happenings

We'll start at Easter- Andrew had to work Easter so we didn't do much but I wanted to do something with him. So we went and grabbed brunch really quick at Tusk & Trotter. They have it buffet style and it was very yummy.


Andrew has been wanting a jeep for awhile but then gave up. Well he was at work driving around and saw this beauty at the Volkswagon Dealer in Rogers. He sent me a picture and I'm pretty sure it said "I'm in love"and then had a picture of the jeep ha! I told him he needed a new vehicle so if we could get a deal on it then get it! We traded in his truck and he brought it home and I LOVE IT! I've been trying to steal it from him but I don't think it's going to happen. But at least I can drive it when he's at work = )




There's a yummy little crepe trailor in downtown fayetteville right off Dickson St. (across from Waffle House). I was walking last Saturday and I saw the word crepe so of course had to stop and get one- AMAZING!! I just got plain nutella but loved every bit of it.




I've got a yummy new recipe for you all. It's called "Tomato Cream Chicken Sausage Pasta" but I couldn't find chicken sausage so used turkey breakfast sausage. It's super easy to make and doesn't take too terribly long. I got it from paleo.omg which has lots of yummy Paleo recipes. 

Tomato Cream Chicken Sausage “Pasta”


Prep time: 20 mins
Cook time: 15 mins
Total time: 35 mins
Serves: 2-4

Ingredients
  • 1 medium sized spaghetti squash
  • 2 chicken sausages, diced
  • 1/2 cup canned full fat coconut milk
  • 1/2 cup tomato sauce
  • 1 bundle of spinach, stems removed
  • 1 teaspoon dried tarragon
  • 1 teaspoon dried thyme
  • 1 teaspoon dried leaf oregano
  • salt and pepper, to taste
Instructions
  1. Preheat your oven to 425 degrees.
  2. Cut your spaghetti squash in half lengthwise and use a spoon to scrap out the excess seeds and threads.
  3. Place cut side down on a baking sheet and cook for 20-25 minutes or until spaghetti squash “gives” when you poke at it.
  4. Once your spaghetti squash is done cooking, take out of the oven to cool.
  5. Heat up a large skillet under medium heat, add the coconut milk and tomato sauce and mix together. Let simmer for about 3-4 minutes.
  6. Now add your diced chicken sausages and spices.
  7. Let the chicken sausages simmer for a couple minutes, then add your spinach to the sauce and simmer for another 3-4 minutes or until chicken sausage is cooked through.
  8. Then use a fork to thread your spaghetti squash and add directly to your chicken sausage sauce mixture.
  9. Mix together then plate!
  10. Consume!
I have always wanted to try spaghetti squash but always figured I'd mess it up somehow. It's actually quite simple if you follow the above directions and pretty tasty! It doesn't have much flavor when it's plain but taste good with the sauce and meat.


Brooke (janae's sister), Whit and I hosted Kirby and Janae's couples shower Saturday night. We went with a cookout and Hogs theme. It was a lot of fun and turned out great! We had tons of different dips for appetizers, cheeseburger sliders, hot dogs, baked beans, cole slaw, potato salad and cupcakes!

Last but not least a picture of my sweet girl. She's banned from being inside by herself because she can't seem to stay off the couch! I've given her tons of chances but I came home and she was just sitting on it and would not get off- I was not happy at all! I came home last weekend and she's sleeping in the sun(which she loves) on the back porch.

To LR we went....

Last Wednesday after work I went to Little Rock with Lora (who works with me) for a continue education course. It was a really good course and I learned some more about feeding with infants. 2 other ladies from work, Amy & Connie, were in LR too for the course so we decided to take advantage of being away and went shopping and out to eat Thursday night. We went shopping at the Promenade at Chenal- if you haven't been and ever in LR I suggest going there. It's so pretty and they have a lot of nice stores (DSW, Anthropolgy, JCrew, Apple, just to name a few) and good restaurants. 
After shopping we got some dinner at YaYa's. It was super yummy and the weather was perfect so we sat on the patio.

Friday after the conference I went to Conway to spend the night with my parents. My mom had just gotten back from Vegas and bought me some goodies! She went to the outlets and got me a shirt from JCrew and a Burberry raincoat- I've been wanting one for awhile now! Thanks mom




I also got to see this sweet little boy! Baxi has an obsession with elephant toys- I'm serious, I know it sounds crazy but he loves toys that are elephants! My mom found this one when we went shopping and he kept wanting everyone to throw it for him.



Mom ordered Bax a doggy bed and with some points she had saved up and they sent her 2, so she gave Nala one- it's a little small but she still likes it


I made stuffed Poblano Peppers tonight and they were YUMMY! Here's the recipe I used. I got it from paleomg.com. She has tons of great recipes, granted this is the only 1 I've made so far but they all look delicious and I've heard good things!


Ingredients
  • 6 poblano peppers, seeded
  • 1 lb ground beef-  (I used ground turkey)
  • 1/2 yellow onion, diced
  • 3 cloves garlic, minced
  • 1 (6 oz) can tomato paste
  • 1 (6 oz) can diced green chiles
  • 2 tablespoons Cholula (or other hot sauce)
  • 1/2 tablespoon garlic powder
  • 1/4 teaspoon ground red pepper
  • 1/8 teaspoon paprika
  • salt and pepper, to taste
  • Fat of choice, for cooking
Instructions
  1. Preheat your oven to 350 degrees.
  2. Add your garlic until the smell becomes fragrant, then add your diced onions. Let the onions cook down until they become translucent.
  3. Add your ground beef to cook down.
  4. Once your ground beef is turning brown, add the rest of your ingredients, minus the poblano peppers.
  5. While the flavors meld, cut the tops off of the poblanos and rinse the inside and out to get rid of the extra seeds. Cut a slit down the side of them and stuff them with the cook meat.
  6. Place them on a covered baking sheet (I covered mine with foil) and bake for 20-25 minutes of until the poblanos begin to blister and soften.
  7. Then eat them.

Now I've got some yummy Paleo Blueberry brownies in the oven cooking- can't wait for them to be done!
