This past week has been crazy busy. I had something to do every night! It was my BFF Janae's wedding on Saturday. She got married at Bell Gable Chapel in Fayetteville and her reception was at the Uark Bowl Room on Dickson. It was a wonderful weekend and beautiful wedding. Janae was a stunning bride of course. I'm awful though and didn't really take very many pictures.
First, I need to share a funny story. So, Friday night was the rehearsal dinner at Ella's Restaurant. After the rehearsal dinner some of us wanted to go find our name on the Sr. Walk before meeting the others out. Well my feet were killing me so I went to Whit's car to change into flats. Saturday morning about 45 min. before we're suppose to leave to go to the Chapel for pictures I notice I only have 1 SHOE (this shoe was the one I needed to wear with the bridesmaid dresses)!!!! I'm freaking out and Brooke (Janae's sister) has some I can borrow which are too big but I don't care at this point I'll make it work.
Micah, one of the bridesmaids, heard me talking about how I can't find my shoe and it has to either be in Whit's car or in Brooke's house- OR unless it fell out of the car or I just left in the parking lot across from Ella's Restaurant. Micah said she saw a shoe in the PARKING LOT!! So Whit, Kara and I haul booty to see if my shoe is in the parking lot and look what we found = )
MY SHOE!!! I was soooo excited!!! Of course this would happen to me- crazy things like this ALWAYS happen! Story of my life.

I made a yummy casserole last weekend and it was sooooo good! And it was semi healthy (remember the word SEMI).
Chicken Alfredo Casserole

Cups Cauliflower, steamed and chopped

Chicken Breasts, Cooked and Cubed

Cup Coconut Milk

Cup Heavy Cream, 1 Stick Butter
1/2
Teaspoon Salt, 1/2 Teaspoon Black Pepper

Cup Parmesan
3
Large Eggs
2
Cups Broccoli Crowns, chopped

Teaspoon Garlic Powder
1/2
Onion Chopped, 6 Strips of Bacon cut in Quarters
1. Preheat oven to 375 F. Melt butter in microwave bowl. Add in cream,
coconut milk, garlic powder, parmesan, salt, onion and eggs and whip with a
fork or whisk.
2. Add chicken and cauliflower and mix it in. Pour into casserole or
cake pan.
3. Add a little more parmesan on top and then place bacon in a single
layer across the top.
4. Bake for 1 hour. Then put on broil for 5-6
minutes until bacon is crispy
