Life Lately

Who else feels like this year is already flying by? I cannot believe March is almost over!!


Well the Crossfit Games Open is over- I've talked about this before but just in case you missed it = ) For 5 weeks Crossfit posted a workout on Wednesday night to do. If you registered for the Open then you had to do this workout before Sunday evening and post your time or reps on the national website. You're competing with people EVERYWHERE and hoping to make a spot at Regionals in Chicago- now this was not my plan to make it to Chicago! I knew there was no chance but it's a great way to see where you are. I'm just happy I made it through all the workouts and wasn't disqualified because I couldn't do any of them. I got in the top 11,000 out of 20,000 worldwide- I'll take it ha, and I'm glad it's over- but it was so much fun competing with everyone and watching them compete each week. These workouts definitely tested your abilities.

Andrew and I went and tried Greenhouse Grill this past week. It was both our first time and it was DELICIOUS!!!

My mom came into town this weekend and I introduced her to Greenhouse for some brunch. 
  Mom got this- Veggie pesto omlet with cheese grits

I got crab cake benedict with hash- if you know me you're thinking umm...I didn't think you liked seafood- but these crab cakes are SOOOOO goood!!!! Guess I'm just picky what seafood I like or Andrew has rubbed off on me 


I also took my mom to The Heirloom in downtown Rogers I mentioned last blog. Every week they change their menu- mom and I both got the Buttermilk Chicken with root veggies- again a yummy meal




I read the Hunger Games series and Saturday night went to see it with mom and friends. It was good, but I did love the books way better! They had so much more detail, which I know they can put it all in the movie. I honestly don't know if I would've liked it though if I hadn't of read the books.


I have so many books on my list to read but I'm currently reading "Heaven is for Real" and it is amazing! I definitely recommend.

Call Ms. Betty Crocker

I have been a cooking machine lately- well ok maybe just 2 meals but that's good for me ; )


Last week I made some bacon wrapped chicken cordon bleu- no not the freezer kind you buy, I actually made it (Paleo style) and it was delish! Andrew loved it as well which was a plus

Tonight I just made tacos and Paleo Strawberry Shortcake


Andrew said we just needed a big thing of Andy's Custard to complete it- ha! We both thought it was pretty tasty too

Strawberry Shortcake (paleo)
16 oz. fresh strawberries

1-2 tsp. honey (optional)


Wash, hull and slice strawberries as small as you want. I also added about 1/2 water to the strawberries and honey to add some 'juice' as they sit. I made this early in the day and let it sit in the refrigerator


2 cups almond flour/meal

1/2 tsp. baking soda

1 tsp. cinnamon

3 Tbsp. cold grass fed butter or coconut oil (I used regular butter)

2 large eggs

2 Tbsp.honey

1 tsp. vanilla



Preheat oven to 350 degrees. Line a sheet pan with parchment paper. In a large bowl combine almond flour, baking soda, and cinnamon. Using a fork or 2 knives, cut the butter into the almond flour until you have formed small beads of butter in the dough.



In a separate bowl whisk together eggs, honey and vanilla. Stir the wet ingredients into the dry. Using a large spoon or measuring cup, drop the dough onto the sheet pan into 6 evenly sized cakes, leaving room between each cake.

Bake for 15-20 minutes, until golden brown. Allow cakes to cool and slice horizontally, and spoon some of the strawberry mixture into the middle, and some exta on top.


My nutrition challenge has FINALLY come to an end and I met my goals- I lost 3% of my body fast and lost inches in some places. Now just to stick to eating good!! Zone is pretty easy to stick too though

For those of you that live in the Rogers/Bentonville area need to try "Heirloom" in downtown Rogers- across from Roger's Little Theatre. It's just a small little place but everything is made in-house and with the freshest ingredients they can get. OMG it was delicious! Every week their menu changes and they have FB (Heirloom Food and Gifts) page so you can see menu every week. I had the Carrot & Pork "Osso Bucco" with Cream of Asparagus soup.

Andrew and I went to LR last night to go see Zac Brown Brand at Verizon Arena. I bought him the tickets for Christmas- he was so excited to see them. I'm not much a of a country music girl nor do I know many songs by the band. I was excited to get away with Andrew though. They actually put on a really good concert and played the guitar and fiddle very well! I could've listened to them play the guitar and fiddle the whole time.
