Short & Sweet

Wow- well blogger has changed- I was just getting used to it too ha! Now I have to figure this one out = (


Nothing to exciting has really been happening lately. I can't remember if I mentioned this before, BUT a a bunch of ladies from my work have been training for a marathon. Or should I say most of us are doing a half-marathon. Ok, for all you people that are amazed that I do CrossFit does not mean I'm a good runner! I despise running!!! Well I take that back- I like it but in short distances, like a mile and that's it ha! Well we're up to 6 mile week UGH! I actually haven't ran it yet- whoops- getting a late start on the 6 mile. 
I went last week on the 5 mile run with a friend up at Crystal bridges trail in Bentonville. Oh I love this trail, so pretty!! However, my left knee started killing me! Had to stop and walk awhile. I've never had a knee injury so I don't know what's up with it. I had a PT (physical therapist) from work tape me (not just tape around my knee but fancy taping hehe) and my knee felt amazing!!! I finally broke down and went to RushRunning to get fitted for a new pair of teenies- and there's a big difference. I'm just anxious to run the 6 miles now and see how my knee acts.


Friday night I went over to Big Kara's to get started on my Halloween wreath. I bought all my stuff for it at Hobby Lobby when I could get it half off =) I also bought some at Michael's in Tulsa. Big Kara is awesome at wrapping the tulle and getting it right, so I just leave it to her! Here's the final product- I love it! Thanks friend- I owe you some tini's!


Did everyone watch the upset Saturday? I was a nervous wreck. Andrew and I went to Louie's in Rogers and hung out with some of his friend from work. It was a packed house!!! There was a Bama fan there and we had to have some words- told him he needed to calm the Bama cheering down = ) Don't worry I was nice about it. It was a very long day and I was exhausted from screaming at the TV.


This picture has nothing to do with the Bama game- but this is Whit, Drew and I in LR tailgating. Big Kara told me how we made the Arkansassports360 facebook page. So I had to share of course.


Today I went and ate lunch with Andrew's grandma. Andrew and her go out to eat some usually during the week, but it's when I have clients. So she finally got to take me. We went to MiMi's Cafe and it was yummy. Afterwards, we went to Gordman's and I found this cute little pumpkin, and yes I had to have it.

AHHHH- I can't believe the Ukraine trip is getting so close! I think I'm ready, maybe! Some people asked me about the flyer I put up last week. Amy, who is also going on the trip, has a better sized one, so here it is. Hopefully it's readable now = )



Who's excited for all the TV series to start back up? I'm super excited but have so much to watch- it's true and sad at the same time. I'm going to watch a new series called "Revenge". The first episode was very good. I definitely recommend it.
Also, I bought Bridesmaid's today and watched it. Love that movie! HILARIOUS!

My mom is coming into town this coming up weekend and I cannot wait!!!

Picture Blog

Yes, I have lots to show and talk about- so get ready!


First, this weather is crazy- I have a feeling we're skipping Fall and going straight to Winter. I LOVE fall though- but it's ok (i guess). I'd rather have this weather than over 100* weather!


Last weekend I went to Conway friday night with my BFF Whit and her mom Kellye. We were pretty tired so didn't do much that night. We got up bright and early saturday to go cheer on our HOGS!! Little Rock tailgating is a must for everyone. The game was awesome because depending on your section you were suppose to wear a red or white shirt, and the student section wore blue. It looked great in the stands! The hog in the middle of the field was also red/white/blue remember 9/11.




Check out these rice krispie treats! How cute are those?!?! My friend, Whit, works for SAMs home office. I know I'm going to get her position wrong, but she has something to do with lead buyer for bakery department (did I get close whit?). Anyways, thank her for these because it was all her doing! In SAMs stores NOW! They went over great at the tailgate and taste so good!

After the game we drove back home because I had to get up and catch a plane to VEGAS!!! My parents had booked their trip and I decided to crash with them = ) Thanks mom/dad for letting me. It was a nice break from work and we had a great time. It actually rained quite a bit surprisingly. When we got there it was raining & HAILING! Something I didn't think I'd ever see in a desert. It usually rained at night though which made for cool mornings walking the strip. We stayed at the Aria, which is located in the center of the strip next to the CityCenter shopping area. It's a fairly new hotel and really nice. 






Pretty chandeliers in Cosmopolitan. This hotel is nuts at night (like can't even walk through it) but during the day it was nice/calm.

 I want this picture- at Hash House A GoGo- everyone needs to eat here if you like breakfast, which I love. It's at Imperial Palace and they're famous for their chicken/waffles (I need to try them sometime).


       Oh and they have huge pancakes- definitely share a meal with someone

Another thing to do while in Vegas is go to the outdoor Premiere Outlet mall. It a short/cheap taxi ride to the outlet with great shopping. I usually go to COACH to try to find a new purse but just couldn't find one I really liked. I've been wanting a small/lite traveling purse and found one at Dooney & Bourke- in my favorite color too = )

Another thing I always try to do in Vegas, is go to Bellagio and look at the garden display. It's always a different theme. Well this year it was under construction = ( We went the next day and they had done some stuff, so picture aren't great because still couldn't walk through it




Wow there's some Vegas pictures- it was a great trip and I had tons of fun! We ate at some really good places and just relaxed.


Since Andrew and I have our own house now, I love decorating! Well which is just now taking place with Halloween = ) I went to Hobby Lobby (which is my new favorite store) and they had tons of stuff 50% off. That's one thing I love about that place- if you find something you just wait about a week and it'll be 50% off. I could spend hours in that store which would get me in a lot of trouble! Here's some decorations I've gotten.

The Ukraine trip is approaching!!! I can't believe it's almost here- definitely getting more nervous/excited thinking about it. There has been a lot of preparation for this trip by all and we could use others help = ) Some have asked how they can help- well you can either make donations or we have a registry where you can help us with our therapy materials to take to use with the children. I couldn't get the flyer with all the information to upload, so I took a picture of it in my e-mail. If you have any questions just get with me and I'll answer away =)






Tomorrow is game day!!! I'm not going this time, instead going with Big Kara and her daughter to see Katy Perry in Tulsa. Don't worry we'll still be cheering on our Hogs even in Tulsa! Everyone have a great week! Sorry for such a long post

Catch up Time

Wow, I haven't blogged in a little bit. I try to blog every week (even though my life isn't that exciting), but have been pretty busy. So here it goes!


2 weekends ago I went and visited my parents in Conway. Mom and I made some yummy chocolate Paleo ice cream. For those of you who don't know what the Paleo diet is, well- it's called the ManCave diet because you basically eat: nuts, veggies, fruits, meat (but grass-fed pasture raised meat) and fish. NO SUGAR AT ALL!! Lately I've been trying a Zone diet- it's not quite as hard core as Paleo and I do pretty well during the week, but then that weekend hits and it goes all down hill = ) Also sometimes for dinner it's hard to stick to the diet because we all know I'm an eating out machine! Ok ok, back to the chocolate paleo ice cream- it was very good! Here's the recipe- use preferrably with an ice cream maker so everything mixes up really well.

2 14 oz cans coconut milk (regular, not light)
2/3 cups unsweetened cocoa powder (I love Penzy's dutch process)
6 TBSP honey
In a medium size bowl, mix the cocoa power with 1 can of coconut milk until combined (I like to sift my cocoa so there isn't any lumps). You should get a fudgey consistency. Then add your other can of coconut milk and honey and wisk until combined.
Pour into your ice cream maker (following their instructions for time, etc). Ours takes 25-30 minutes.

Last week my dad was in town doing some work for a friend and stayed with Andrew and I. One night I decided to try another Paleo recipe for pizza. Here's the recipe
Crust:
2 cups almond meal
2 eggs
3 tbsp olive oil
¼ tsp baking soda
1 tsp garlic powder
1 ½ tbsp fresh rosemary chopped
Toppings: 
1 cup organic marinara sauce
1 lb Italian pork sausage nitrate free
2 crook neck yellow summer squash diced
3 green onions chopped
Handful of torn basil leaves
2 small tomatoes diced
1/2 cup roasted red peppers diced
Handful of sliced black olives
***Preheat your oven to 350. Using a spoon mix all crust ingredients together until it becomes very thick.  Using your hands, form the dough into a ball.  Lightly grease a pizza pan or a cookie sheet with olive oil.  Place the ball of dough in the center of your cookie sheet or pizza pan and using your hands, push and pat the dough down into the shape of a circle.  You want to make the dough as thin as possible.  Your pizza will be about 12 inches across.  Bake JUST the crust in your pre-heated oven for 20 minutes.  While your crust is cooking, prepare your toppings.   After the crust if done, remove from the oven and evenly spread the marinara sauce over the crust.  Add the sausage and all remaining toppings evenly over the sauce and bake again for an additional 25-30 minutes.  
I wasn't sure about this pizza- but I loved it! I remembered to take a picture after we pretty much demolished it = ) 

This weekend was labor day weekend, but best of all, HOG FOOTBALL STARTED! Andrew had to work this game so my dad went with me. This was our first year to have season tickets- I love our seats and had so much fun with a great win!




I also got a new cooler painted from a sorority sister (Allyson Mcguire, Creative Design by Allyson Mcguire on facebook) just in time for the first Hog game!



Sunday I went to the clothesline fair in Prairie Grove. I have grown up going to this fair but have not been in probably 5 years. So I decided it was time to go back this year since I didn't have any big plans. I must admit I was disappointed. They had some good stuff don't get me wrong, it just wasn't as big as I remember it being. I went to War Eagle last year and it was huge- I loved it! I was expecting it to be big like that but it wasn't. However, I did buy some yummy salsa.

Today I went to Fayetteville to do some shopping with Big Kara. I got some house decorations, fall decorations and I got stuff to make, um Big Kara will make, a Halloween Wreath. 
I have been waiting for this picture to go on sale! Our extra bedroom/tv room/Andrew's man room is being decorated in Hog decor/game room type stuff- I love it! I'm slowly but surely getting the house how I want it. I think our bedroom will be the last room to tackle, because I want a new bedroom set, and probably won't decorate until we decide which set we want. Not that we're looking hard or anything at the moment- but some day = )

I'm so excited it's a short work week, another Hog game this weekend in LR and then leaving Sunday for Las Vegas!!!!
